A birthday cake!

Alright .. It's been stupidly hot in Denmark this summer! Unbelievable!!
We've all been struggling at my place ... Me, the kids, my partner (when he's been around), and who ever have been around here for visits.
Also ..  It was my daughters birthday the 25th of july. It was 32 celsius here .. So absolutely NO hot chocolate this time. We needed something fresh, and loads of juice for the kids! Ice coffee for the adults :)

So with a decision from my daughter, ended we up with: PAVLOVA



Actually, it's not hard at all to make a pavlova cake.
Make a normal (or italian) meringue dough (or whatever you can call that). Remember that the egg whites need to be whipped stiff! AS IN STIFF!
It kinda bakes itself .. give it lover heat, longer time than normal cakes. I think mine was in for maybe 2 hours.
We added whipped cream with raspberries in it, and then LOADS of fresh danish traditional berries on top. She added pink small hard sugar balls as well .. After all, it was her birthday cake :)

Fun fact about the pavlova, is that it's from Australian an New Zealand .. But it's named after Anna Pavlova, who was a Russian ballerina.
