Baking. Is it really that hard?

I'm not a baker, and i will never be. Baking is not that much an interest for me, but i do like making my own. And why do i do that? Cause these days a time, you don't even have to go to the bakery, to get bread that is good. You can just get it in the supermarket. Even cheap enough ..


The thing is, what i don't like is .. When i buy cheap alright bread in the supermarket, and i look on the back of the package. Wow, There's a lot of things in this bread, that didn't even have to be there. That's why i make my own.

This is when people always asks. How do you get the time? How do you do it nice? What's the recipe? What flour? Which seeds? Is it cheaper? Fresh yeast or dried? There's always loads of questions about that baking. But the truth about making your own bread, is … It's really easy, don't take a lot of time, cheaper!

I don't always make the same type of bread, but i do have a basic recipe to follow. And i actually learn my partner to do his own bread, instead of buying. He loves it now, and i personally think, that he will never go back. First he was a bit afraid of just trying, but he soon got into it, and now i can't stop him. :)

Right so .. I'll give you guys a picture, then the basic recipe and what i do then to make my bread interesting.


 Basic baking - (10-12 bread rolls)
10 g of fresh yeast
500 ml water
1 little hand of salt

So that probably sounds weird, cause now I've got no flour at all. For baking with yeast, you honestly need some flour with a high gluten contents. So i just use basic plain flour. I might use a cup og that .. Then i need some wholegrain flour, a good one to start out with is grahams flour. I use same amount of each flour.
Now the fun is gonna start .. I add other things. Different types of seed (just what I've got in my kitchen), sometimes i use a bit of veggies or fruits. It just makes your bread rolls a bit more tasty to eat.

You'll probably get confused now. Cause my recipe is shite - i know. But if you stick to the amount of water, yeast and salt - then you go crazy and have a play about your bread dough. Just try stuff out. Just remember one thing, never have a firm dough. It needs to be sticky and a nit like chewing gum.


It might start out as a lot of money, but ones you get into it, you've got the stuff you need just by your hands.

Make sure you always got:
Plain flower, different types of wholegrain flour, salt, fresh yeast (in Denmark you find them in the fridge with eggs. In England you can it mostly in every supermarket for free, just ask a worker), different types of seeds and than maybe some veggies og fruits that is a waste.

  1. Hi! Cool post! I never make my own bread but would like to: i hate all the additives they put in processed bread.
    I have 2 question: do you leave your dough to rest (if yes, how long?) - what is the time temperature to bake ?

      If i'm baking it same day, i leave it for at least 2 hours. If i'm leaving it for next day, i will half the amount of yeast, and let it rest/raise in the fridge for about 12 hours.

    2. Baking - i use a normal gas oven, 200 celsius for about 15-20 minutes
